    It’s the beginning of August and my opportunity to speak with Ellen Bayens of theceliacscene.com to chat about the articles she has brought to our attention over the past month.

    I was happy to let Ellen step up on her soapbox to talk about how unsafe gluten free food is when it’s prepared within a gluten bakery. This seems to be happening more often lately, even though we recognize that the food certainly doesn’t meet our normal standards for gluten free. Consumers are driving this trend, so it would seem it’s something we can change.

    We also spoke about the value of Registered Dieticians who specialize in celiac disease. The name Selena DeVries came up as someone who understands our struggles first-hand and is there to help.

    Ellen mentioned a few of my recent podcasts including 5 Tips for Cruising Gluten Free, my conversation with Miski Brewing about their quinoa-based beer, and on my other podcast, my co-host Aaron’s struggles with EOE – a condition that is more common in the celiac community.

  • Ep 374 Five Lessons for Cruising Gluten Free

    This podcast episode is a solo effort. I had mentioned to Ellen Bayens earlier in the spring that I wanted to take some time to gather my thoughts on what stategies I employed while on a recent cruise that helped make my meals wonderful and safe. I’ve broken my thoughts down to five lessons and add a couple of stories on situations that happened. I ate very well on my transatlantic cruise on the Celebrity Edge in April. It takes a bit of effort and many conversations, but I was very looked after.

    It’s the beginning of July, so for me that means another opportunity to speak with Ellen Bayens of theceliacscene.com to discuss articles and topics of interest Ellen has presented to us over the past month. It’s been a busy couple of months for both Ellen and I. She welcomed a new granddaughter and my daughter got married – we’re both still on a bit of a high!

    Ellen and I spoke about the return of Only Oats to Canadian stores. The return will be gradual, but lots of work is being done to have the safe oats available across Canada. Ellen also told us about two brands of artificial crab that were improperly labelled omitting wheat and egg, so they appeared to be gluten free, but were not. We spoke about how gluten free consumers might approach this situation.

    Ellen has had a long relationship with the restaurant chain Noodlebox, but recently it has become apparent that they are no longer able to ensure meals can be made gluten free. We discuss how this happened, and how you might may still want to work with your local Noodlebox location.

Miski Brewing has an interesting story of how an unlikely gluten free ingredient came to be made into an organic gluten free beer.   • Ep 271 Only Oats is Back

    On this episode I speak with the new owners of Only Oats who are committed to getting the products back on store shelves across Canada. Many of us were concerned when our trusted oat brand was no longer available in our area and unfortunately, we had to wait to get the answered we needed. Only Oats is now back in the marketplace and today we hear about what happened, and how the new owners of the brand are working to come back and be there for consumers. I also speak with a registered dietitian who works with Only Oats about oats and how they fit into a gluten free diet, along with tips for adding this very nutritious food into our gluten free recipes.

    Here’s the recipe Cara gave me –

    Oatmeal Flax Banana Bread

    Recipe developed by: Cara Stoller, B. HEc. R.D.

    Our household goes through a few of these loaves each week!

    Preheat oven to 325 F.

    Spray and line a standard loaf pan with parchment paper to be able to lift out easily.

    3 ripe bananas

    1⁄2 cup egg whites

    1⁄2 cup plain Greek yogurt

    2 tablespoons canola oil

    1 tablespoon vanilla extract

    3⁄4 cup ground rolled oats

    3⁄4 cup ground flax meal

    1 teaspoon baking soda

    1 teaspoon baking powder

    Chocolate chips or walnuts if desired.

    Combine wet ingredients in food processor. Add in dry ingredients and combine. Add chocolate chips

    or walnuts if using and mix by hand. Pour into prepared loaf pan and bake for approximately 1 hour

    at 325 F. Check with toothpick after 50 minutes.

    Allow to sit in pan approximately 5 minutes once removed from oven. Lift out onto cooling rack and

    gently roll out of parchment paper. Allow to cool prior to cutting.

    It’s the beginning of June, so for me that means another opportunity to speak with Ellen Bayens of theceliacscene.com to discuss articles, studies and topics of interest Ellen has presented to us over the past month. This month Ellen gave us a study that looks at the pattern of healthcare visits of someone not yet diagnosed with celiac disease. This is considered to be the “diagnostic window” and past studies have been able to help with speedier diagnosis once a broad pattern has been established. This is already being done for some cancers and is currently being studied as an approach to celiac disease, parkinsons and other digestive conditions. If physicians were able to identify the need for celiac testing earlier, we could all benefit. This promoted a discussion of the uses for artificial intelligence as a tool for doctors.

    Ellen published an article titled “My Mother’s Long & Winding Road to Diagnosis”. This is a complicated story with many twists and turns, and it wasn’t until I reached the end of the article that I realized this was actually written by Ellen about her Mother. She showed such courage and grace during very difficult times. Ellen and I give a quick synopsis, but I encourage you to read the entire article. We then discussed how important it is to be positive about your diagnosis, which can be difficult at first, but should be a goal.

  • Ep 269 Infertility Struggles and Celiac Disease

    On this episode I speak with Justine Dowd PhD who, along with having celiac disease herself, is a Health and Wellness Specialist and Wellness Coach. Justine and I tackle the emotional topic of infertility as it relates to celiac disease. This topic includes issues around fertility for those diagnosed, along with the uncertainty for those yet to be diagnosed. Both Justine and I have suffered miscarriages, which are not uncommon, but are emotionally difficult for an entire family. Justine tells us about the gut-brain connection and goes through some of her strategies to assist couples preparing for an upcoming pregnancy. As well, Justine talks specifics about some of the therapy she used to help her conceive and maintain a pregnancy.     Happy May, Celiac Awareness Month!

    At the beginning of each month, I speak with Ellen Bayens of theceliacscene.com to discuss articles, studies and topics of interest Ellen has presented to us over the past month. Of great concern to consumers in general, and gluten free consumers in particular, is the rising cost of food. In an effort to bring our unique perspective on these issues in front of lawmakers, Celiac Canada held a breakfast event on Parliament Hill recently. There are many aspects to the CCA message including the emphasis on the gluten free diet costing up to five times as much as gluten food, the unworkable tax relief that is not an effective solution as well as the lack of nutritional fortification in our gluten free processed foods.

    Dr. Peter Green debunks six common myths of celiac disease. I found this particularly fascinating, as science will always win out these emotionally charged discussions. Ellen also brought us an article on new guidelines for physicians to diagnose and treat their celiac patients. Selena DeVries RD shares valuable information about over-the-counter allergy medications as well as her advice on digestive enzymes.

    Ellen has done it again – she’s found new foods in her area. She not only found a cafeteria-style build your own pizza place, but also gluten free waffle cones.

    On this episode I speak with Dr. Dan Leffler who is heading an international study to trial a medication for celiac disease. The medication is TAK-062 and the trial is called Illuminate-62. The trial is looking for individuals who are confirmed celiac, eating a gluten free diet, but still experiencing symptoms.     Kate Avery, MPH, Director of Research & Patient Engagement Takeda Pharmaceuticals recently launched the Illuminate-062 Study , a Phase 2 clinical trial to study TAK-062, a gluten digesting enzyme, as a potential treatment for celiac disease . The trial is taking place in the United States, Canada and Europe, and is currently enrolling participants.
